If you’re anything like me, you visit the grocery store during the summer and end up in the produce department ecstatic over the seasonal produce and it’s accompanying low price. All too often, I find myself eagerly filling produce bags with a variety of bright, fresh fruits and the mindset that I’ll find a way to eat it later. Then later comes. I forgot the fruit. I embarrassingly throw out container after container of fruit with questionable growths and wonder how this happened again.

The answer is obvious: I had no plan for the produce. I began to re-evaluate the way I shop, strategically selecting the produce I would buy at the store prior to leaving my home. Now, I write out a plan of the recipes I’ve decided to make that week, taking note of what produce is required. This includes the fruit that I intend on eating for the week. If it turns out that I’ve purchased too much, at the end of the week I’ll freeze leftover fruit and use it in smoothies later on.

Since implementing this plan of shopping and eating, I’ve significantly reduced the food waste that I produce. Simply buying less is the easiest and cheapest way to decrease the produce that you throw out.

Now, how does this tie back to the salad? This salad is a result of a last-ditch effort to use up the fruit I’d stocked up on while it still had the life in it. Whatever berries or fruits you have on hand can easily be added or substituted in to this recipe, with the exclusion of strawberries (sorry). Throw together whatever produce you have and enjoy this sweet salad.

What you’ll need to make this easy summer salad:

To make the strawberry balsamic vinaigrette, you’ll need the following ingredients.

-Strawberries

-Balsamic vinegar

-Extra virgin olive oil

-Water

-Honey

-Salt & Pepper

To make the salad you’ll need the following ingredients.

-Spring mix

-Strawberries

-Blueberries

-Apple

-Grapes

-Chopped pecans

-Avocado

-Hemp hearts

Like I said before, the fruits that are included in the salad can be substituted with other fruits and any fruit you have on hand can be added in. There’s flexibility in what you include include in the salad, so try whatever you’d like!

How you’ll make this easy summer salad:

To begin, you’ll need a high speed blender or a food processor to make the homemade salad dressing. Measure out 1 cup of strawberries and roughly slice in to small pieces. Add the strawberries, balsamic vinegar, extra virgin olive oil, water, honey, salt and pepper to the blender or food processor. Pulse repeatedly until the dressing is smooth and all large strawberry pieces have been blended. Once you’ve made the strawberry balsamic vinaigrette, store it in the refrigerator in an airtight bottle such as a mason jar.

For the spring mix, 5 ounces is equal to 1 bag of the mix that I get at Trader Joe’s. Add the spring mix to a large salad mixing bowl.

Before handling any of the fruit, thoroughly wash and dry the strawberries, blueberries, grapes and apple. Remove the stems of the strawberries and cut in half. Cut each strawberry half in to quarters, resulting in 8 pieces per strawberry. Add these to the salad bowl. Cut the grapes in half as well. Measure out 1 cup each of blueberries and grapes, adding these to the bowl as well. Additionally, add pecans and hemp hearts. Toss the salad, evenly distributing the fruit.

To cut the avocado in to small cubes, first cut the avocado in half. Remove the pit. Cut the meat in each half diagonally in to cubes. Then, use a large spoon to peel and scoop the cubes in to the bowl. Add the avocado to the salad and toss lightly.

Ingredients
  

Strawberry Balsamic Vinaigrette

  • 1 cup strawberries, sliced
  • 1/4 cup balsamic vinegar
  • 5 tbsp extra virgin olive oil
  • 2 tbsp water
  • 2 tbsp honey
  • 1/2 tsp salt
  • 1/4 tsp pepper

Salad

  • 5 oz spring mix
  • 1 cup strawberries, sliced
  • 1 cup blueberries
  • 1/2 apple
  • 1 cup grapes
  • 1/4 cup pecans, chopped
  • 1 avocado
  • 2 tbsp hemp hearts

Instructions
 

  • In a blender or food processor, combine chopped strawberries, balsamic vinegar, extra virgin olive oil, water, honey, salt and pepper and pulse until smooth.
  • Add the spring mix to a large salad bowl.
  • Remove the greens from strawberries and slice in half. Slice each half in quarters and add to the salad bowl
  • Cut the grapes in half. Add blueberries, grapes, pecans and hemp hearts to the salad bowl.
  • Cut the apple in to thin slices, then cut each slice in to 4 or 5 pieces depending on the size of the apple. Add to the salad bowl.
  • Toss the salad , evenly distributing the fruit.
  • Slice the avocado in half. Cut each half in to cubes, then use a large spoon to scoop the cubes in to the salad bowl.
  • Lightly toss the salad to mix in the avocado.
  • Serve and top with the strawberry balsamic vinaigrette.
